Vietnamese food is becoming as mainstream as Thai, Fresh salads garnished with peanuts, simple fish and meat dishes, fresh spring rolls - it's the sort of food we love to eat today - naturally low in fat, fresh and healthy. There are a few ingredients that still have to be bought at speciality Asian food stores, but most of these keep for ages; the main ingredients in Vietnamese food can be bought at the supermarket.
We've taken to Vietmanese food like we did 20 years ago to Indian and a decade ago to Thai ... and why not? Life without fresh rice paper rolls and bowls of steaming pho noodle soup just wouldn't be the same. Little wonder we love this South-East Asian food so much: it's very healthy cuisine, the recipes calling for stacks of fresh herbs and vegetables, and they're as quick as they are easy to make.
